The Croft Mill Breakfast Experience

My love of food began when I achieved my Cordon Bleu training which started me on a 20 year journey as a chef. I still get excited in sourcing regional ingredients and local artisan products. I do my best to buy fresh, locally produced food according to the season wherever possible and ideally from local shops, farmers markets etc. This brings a two fold environmental benefit, firstly it avoids the need for the typical trip to the out of town supermarkets and secondly it gets away from the current obsession with all manner of produce being available from the four corners of the world at all times.

To accompany your stay at Croft Mill, please enjoy our breakfast hamper - complete with a special recipe handbook, which hopefully will inspire you with a few new takes on olditime favourites - all of which can be easily and quickly prepared using the complimentary local and organic ingredients provided in your breakfast hamper. Eating breakfast means you “break the fast” so why not start with a bowl of fruit salad or apple juice – its sharp fresh taste will sharpen your appetite and wake you up. Or why not treat yourself to a nice hot breakfast and some quality time before setting out on your day. As variety is the spice of life there is plenty to choose from and hopefully you will find your favourites and experience
the best of Yorkshire.

Sample Recipe: Souffle Omlette

Soffle Omlette

Ingredients:

  • 3 Organic Eggs, separated
  • 2 Dstsp Unrefined Organic Sugar
  • Yorkshire Butter
  • The Fruity Kitchen Raspberry Jam - lightly warmed

Method:

Add sugar to the egg yolks and whisk until the mixture is slightly thick and creamy. Melt the butter in the frying pan and turn the heat on the grill to very hot. Whisk the egg whites until stiff (making sure to use a clean bowl and whisk) and using a metal spoon lightly fold them into the yolks. Now pour the whole mixture into the foaming butter, stir a bit to prevent anything stick to the bottom. After 15-20 seconds place the pan under the grill so that the top can brown nicely.
Serve immediately with a little Jam.
